I'm reluctant to share this, as it hardly rises to the level of cooking, but it a) tastes good, and b) is a way to whittle away at the tomato glut, even as we make the transition to the all-meat diets of winter. A long day of attempting to gather converts to the Church of Ferdinand de Saussure left me with a thirst, and a desire to revisit Tartare on a Bun. The patties were in the pan before I realized we had no ketchup. I know that commercial ketchup is basically an oozy red crack rock of sodium and high fructose corn syrup, but I do like it on a burger. But this night, it was not to be. We did have a few tomatoes I salvaged from out back,* and of course we had mayonaise. Thin slices of tomato, thin layer of mayo on burger and on bun (English muffin, natch). It was a remarkable synthesis -- I'd bothered to get some decent beef, and the mayo was like Charlie Watts, tying the beef and the tomato together. If there are still good tomatoes where you are, I urge you to try this.
*Tomatoes, it turns out, do not flourish in a Waldorf school-style environment. They want discipline, or at least not to be left on their own all summer.
They'll say things like "You got to be kidding me" "Unbelievable" Don't let it ever persuade your bid.
