There's a great cookbook that also details the interconnection between French and other (specifically, Arabic/North African) cuisines, Made in Marseille. Haven't read the Paris cookbook, but I would dare to say that the Marseille volume is a better example of really integrated cuisines, and less of an Epcot-style tour. However, there's no East/Southeast Asian influences there (at least, not in the book).

To further underscore the point: Zidane played for Marseille, not Paris.
