Nice crop! I like using sage this way: cook up a bag of what U.S. supermarkets call "large lima beans" along with some diced tomato (canned is fine), onion, garlic, sage, and copious amounts of olive oil. You get something approaching what the Greeks call "Gigantes." Serve as a side, warm or at room temperature.
