The Cod does not have the energy to keep up with the Serious Eats blog empire on the reg. I did come across a recent SE post berating a recent NYT banh mi article. Considering that the NYT article is talking about the adaptive radiation in the United States of a food stuff that is itself a product of European colonization of Asia, the SE post's reliance on a fixed "real" or "traditional" banh mi seems a bit shrill. But not mad at the conversation -- as the Cod begins to contemplate making his own damn banh mi, it's nice to have some different ideas floating around. More importantly, the entire SE post reminded me of Morgan Freeman's tostada jeremiad:
When "Why Wasn't I Consulted?" meets pickled vegetables and pate, I suppose.
