Wings have been in the news, in terms of shortages, and also in terms of recipes popping up in surprising places. My employer's alumni magazine recently featured a Korean chicken wing on the cover. Personally, an alumni magazine for a southeastern land grant university is not usually my go-to for Korean recipes, but I made them, and they were legit. The key, of course, is gochujang, which is hard to find around here, but not hard to order from H-Mart.* The two big variables for wings are
1) Method and
2) Seasoning.
I tried to lay it out in this chart. A few notes: There are more or less 2 major sauces and 2 major methods, which you can mix or match as you see fit. In the realm of the oven baked, Kenji dusts his wings w/ baking powder and lets them rest. If you have time, this is a good step, as you get crisper skin. The Clemson World wings were good, if a little chewy, and could have done w/ slightly less time in the oven. For fried wings, if you are frying, the extra time and fuss of double frying creates a better finished product, regardless of what sauce approach you use. If you make Buffalo wings, you will need to make (not buy) blue cheese dressing. I don't make the rules. You are also not allowed to serve any of these with ranch. Nice sides for the Korean wings are white rice on the sticky side, and peeled, seeded and diced cucumbers tossed with 3 parts sugar to 1 part salt - maybe a teaspoon of this per cuke - tossed and allowed to sit in the fridge for 30 minutes or so, with a sprinkle of hot pepper flakes, or not. I am including lemon pepper wings on this chart as a promise to myself. I gather that they are one of the many contributions to human felicity that have come out of Atlanta strip clubs, but I have not had a chance to try them, either in situ or at home.

*It is not a great idea to order condiments from the Bezos Death Star - a fair number of what's on offer is from 3rd party resellers and is not the size or not the variety you ordered, in my experience.
